As a kid I hated the beans dry, fiercely opposed to the mere mention. As adults, however, tastes change, and so I propose a appetizing recipe: dry fried beans. This is a specialty from Puglia, southern Italy.
500 g of dried beans
1 medium sized potato
extra virgin olive oil
100 g of salt
Wash and peel the potato. The cook along with the previously soaked dried beans, the latter, the night before. Cooking time about 10 minutes in salted water.
After the beans are drained fired first for 5 minutes, then immerse in a large frying liquid. Strictly in the bathroom of extra virgin olive oil from the fruit of medium intensity, round and harmonious taste.
