Also the vinegar deserves our attention. In the following, we describe what a gourmet should take in consideration while choosing vinegar:


The harmony is the general feeling of pleasantness that derives from our olfactory and taste sensations. Everything that comes through our senses should be balanced, without any prevalence of an aroma on the others.

The body
The body is the tactile sensation which we feel in the mouth; it represents the density, viscosity and texture of vinegar. Good quality vinegars should have a quite strong body.

The fragrance
The fragrance is the olfactory sensation of freshness and lightness.

The lack of defects
Vinegar should present an agreeable flavor, without negative attributes.
